- 200 gramos champiñones feteados
- 200 gramos tomate en salsa

- Hasta eso ponemos el sartén con un poco de aceite de oliva para ponchar la cebolla y ajo cortados a gusto, ponemos sal y pimienta, luego él harina y el caldo de verdura (1/2 taza) y mezclamos para que se una todo, agregamos el vino



- Una vez evaporado el vino agregamos el champiñón, pimentón y perejil, mezclamos por unos 10 minutos y listo, lavamos las berenjenas y las colocamos en una asadera y la llevamos unos 20 minutos al horno a 200 grados, una vez semiasadas la sacamos y extraemos la pulpa quedando lista para su relleno, dejamos enfriar un poquito



- En una ollita ponemos el tomate y sofreímos por unos 5 minutos, agregamos las especias que más nos guste para darle sabor, en el recipiente que vamos a utilizar le ponemos de base gran parte de la salsa, luego colocamos las berenjenas a las que también le ponemos unas cucharadas de salsa



- Luego agregamos el relleno y ponemos en el horno por unos 20 minutos a 200 grados, sacamos le ponemos el queso de rallar y unos granos de choclo o lo que más les guste y regresamos al horno por unos minutos hasta que se derrita el queso, listo parece mucho pero es que hablo demasiado, será que ya estoy festejando con un buen tinto 🍷😂🥂
