A continuación vertemos un vaso de nuestro caldo escogido (calentar una olla previamente con el caldo) y comenzamos a remover suave y que el arroz vaya absorbiendo la salsa. Realizar este proceso cada vez que te quedes sin salsa. El truco está en siempre mover con suavidad el arroz junto a todo el sofrito.


- Cuando pasen 15 minutos, pruebas el arroz y ves como está de sabor. Puedes añadir un poco de albahaca fresca (especias en caso de que no tengas), más sal y pimienta al gusto.
- Cuando el arroz esté al dente a los 18 min aprox (siempre probar el arroz porque la cocción depende mucho del nivel de calor) y veas que esta meloso, lo apartas del fuego y añades mantequilla y el queso parmesano. Lo mueves todo y lo dejas reposar unos 5 minutos aprox.
